Roasted coffee is at its peak roughly 7 to 30 days off-roast, then declines as it degasses and oxidizes. Look for a specific "Roasted On" date rather than a vague "Best By," and a bag with a one-way degassing valve that vents CO2 without letting oxygen in. A fresh, mid-tier bean beats a stale, expensive one every time.
High-grown coffees are denser and carry more potential flavor, which is why elevation, varietal, and processing method (washed or natural) belong on the label. Origin transparency is also a proxy for quality control: a roaster who names the farm and region is usually managing defects and sourcing with care.
Grinding multiplies surface area and starts aromatic loss within minutes, so a burr grinder and grinding per brew will out-improve almost any other upgrade. Match grind to method, finer for pour-over and espresso, coarser for French press and cold brew, and dial in from there.
Whole beans hit their peak about 7 to 30 days off-roast and decline steadily after. Buy what you will use within a few weeks, keep the bag sealed away from heat and light, and grind per brew.
