A whole bean protects its aromatics inside an intact structure; grinding shatters that protection. Within minutes, the most volatile compounds escape and oxygen begins to stale the coffee. This is why grinding fresh is ideal and why ground coffee must be treated as a freshness-critical product, not a pantry staple.
The roasters worth buying displace oxygen with nitrogen at packing and fit a one-way degassing valve so CO2 can escape without air getting in. That packaging is the difference between ground coffee that holds for weeks and a bag that tastes flat and papery by the time it reaches you.
A single grind cannot be optimal everywhere. Drip and pour-over want medium to medium-fine; French press and cold brew want coarse; espresso wants fine. If a bag's grind is mismatched to your method, expect either weak under-extraction or astringent over-extraction regardless of bean quality.
