A great dark roast is defined by development, not color. The roaster's job is to carry the bean deep into the Maillard reaction and sugar caramelization, then drop the batch at the edge of second crack to capture cocoa, dried fruit, and molasses-like depth. Most commercial dark roasts fail at exactly this point: they scorch low-density, low-grade green coffee to mask defects, leaving carbon and astringency where flavor should be.

A properly developed dark roast pushes flavor through caramelization without tipping into pyrolysis. Two failure modes dominate the supermarket shelf: scorching, where surface temperature spikes and burns the bean's exterior, and baking, where the roaster stalls the profile and dulls the cup into flat, bread-like notes. Look for an even, matte-to-oily surface and a stated roast level that reads as intentional rather than a way to hide poor sourcing.
Longer roasting makes the bean more porous and its compounds more soluble, so a dark roast gives up its flavor quickly. That is why over-extraction and astringency are the most common brewing errors here. Drop your water temperature to roughly 195-200F, coarsen the grind a step, and shorten your contact time or ratio to keep the cup balanced rather than ashy.
Specialty-grade dark roasts are at their best in espresso and immersion brewing, where their solubility builds heavy mouthfeel and dense crema. Buy fresh roasted with a visible roast date, rest espresso 7-14 days off-roast to let the bean degas, and grind immediately before brewing to preserve aromatics.
Whole beans preserve aromatics until the moment you grind, which is why specialty coffee is sold this way. Buy fresh-roasted with a visible roast date, store sealed away from oxygen, heat, and light, and grind immediately before brewing. Around 195-200F (90-93C). Dark roasts are porous and highly soluble, so cooler water slows extraction and prevents the astringent, ashy edge you get when near-boiling water strips the cup.
Usually one of two causes: the beans were over-developed past second crack (scorched at the roastery), or you are over-extracting at home. Coarsen the grind, lower water temperature, and confirm the roast date is recent.
No meaningful difference. Roast level barely changes caffeine content; perceived strength comes from body and extraction, not the roast color.
Slightly coarser than you would for a light roast. High solubility means fine particles over-extract fast, producing bitterness and astringency.
Whole beans are at their peak roughly 7-30 days off-roast and decline steadily after. Buy what you will use within a few weeks, keep them sealed, and grind per brew.
