Steep a coarse grind in cold water for 12-24 hours, typically around a 1:8 ratio for a concentrate, then filter and dilute with water or milk. Cold water extracts slowly and selectively, which is why cold brew reads as low-acid and heavy-bodied. Longer steeps increase strength but eventually add muddiness.
Whole beans preserve aromatics until the moment you grind, which is why specialty coffee is sold this way. Buy fresh-roasted with a visible roast date, store sealed away from oxygen, heat, and light, and grind immediately before brewing. A burr grinder and a recent roast date will out-improve almost any equipment upgrade.
Typically 12-24 hours. Shorter steeps are lighter; longer steeps build strength but can turn muddy past about 24 hours.
Cold water extracts the acidic and bitter compounds far more slowly than hot water, so a cold steep yields a naturally low-acid, heavy-bodied concentrate.
Whole beans are at their peak roughly 7-30 days off-roast and decline steadily after. Buy what you will use within a few weeks, keep them sealed, and grind per brew.
