Look for an even, matte-to-oily surface and a stated roast level that reads as intentional rather than a way to hide poor sourcing.

Why dark roasts extract faster

Longer roasting makes the bean more porous and its compounds more soluble, so a dark roast gives up its flavor quickly. That is why over-extraction and astringency are the most common brewing errors here. Drop your water temperature to roughly 195-200F, coarsen the grind a step, and shorten your contact time or ratio to keep the cup balanced rather than ashy.

Fresh-roasted dark roast for espresso and French press

Specialty-grade dark roasts are at their best in espresso and immersion brewing, where their solubility builds heavy mouthfeel and dense crema. Buy fresh roasted with a visible roast date, rest espresso 7-14 days off-roast to let the bean degas, and grind immediately before brewing to preserve aromatics.

Why does my dark roast taste ashy or burnt?

Does a darker roast have more caffeine?

No meaningful difference. Roast level barely changes caffeine content; perceived strength comes from body and extraction, not the roast color.
