Target a 1:16 ratio with water near 205F and a medium-fine grind. Start with a bloom, wetting the grounds with about twice their weight in water for 30-45 seconds so trapped CO2 degasses, then pour in slow, even stages. Even saturation is everything; dry pockets and channeling flatten the cup.
Specialty-grade, fresh-roasted light and medium roasts are the natural fit, especially washed-process single origins with structured acidity. The method's clarity exposes both quality and defects, so freshness and sourcing carry extra weight.
Cold and iced formats lean on low-temperature or flash-chilled extraction to keep acidity and bitterness in check while preserving body. Concentrates are designed to be diluted, so judge them by how balanced they taste once water or milk and ice are added, not straight from the bottle.
