In Sumatra, coffee is hulled while the bean is still moist, a process unique to the region that produces its hallmark heavy body, muted acidity, and earthy, herbal, sometimes funky character. Grown at 900-1,500m on Indonesian volcanic soil, it is a favorite for heavier roasts and immersion brewing.

Degassing, oxidation, and surface area

Grinding multiplies a bean's surface area by orders of magnitude, so volatile aromatics off-gas within minutes and oxidation accelerates staling. That is the central challenge of pre-ground coffee.
