A standard modern shot targets a 1:2 brew ratio (for example, 18g in, 36g out) in about 25-30 seconds. Fine grinding creates the resistance espresso needs, but it also generates fines that drive channeling, the uneven flow that causes sour-and-bitter shots. Freshness and an even grind matter more here than in any other method.
Medium and medium-dark roasts are the most forgiving to dial in and build the densest crema, though modern light-roast espresso is rewarding if you have grind control. Rest fresh-roasted espresso about 7-14 days off-roast so it degasses; brewing too fresh causes gushing and unstable extraction.
Ready-to-drink coffee is engineered for stability on a shelf or in a fridge, which constrains how much delicate aromatic character survives. The strongest products balance that reality with real coffee flavor and restrained sweetness. Judge them on clarity and balance rather than added-sugar intensity, and keep them cold.
Medium to medium-dark roasts are the most forgiving and produce dense crema. Light-roast espresso is excellent but demands precise grinding and dialing in.
Sour usually means under-extraction (grind finer or raise dose); bitter means over-extraction (grind coarser). Inconsistent shots often trace to channeling from uneven grinding or poor puck prep.
Use beans within a few weeks of roast, but rest them about 7-14 days first. Espresso brewed too soon off-roast gushes and extracts unevenly because of excess CO2.
It depends on the product. Refrigerated cold brews must stay cold; shelf-stable canned and boxed coffees do not until opened, then should be refrigerated and consumed quickly.
